Roasted Green Beans

This is an elegant, tasty, and very simple vegetable side dish that works very well on Thanksgiving when you don't have time to fuss with your veggies. It's also a nice alternative to the gooey and ubiquitous green bean casserole. I can't take credit for creating it-I found it on epicurious.com.

You'll need:
2 shallots, peeled and sliced
1-2 lbs green beans or haricot verts, rinsed and with the ends snapped off
2 small heads of fennel, sliced
3 tbsp olive oil
salt and pepper

Preheat your oven to 350. If you're using it to cook your turkey, just put this dish in with the turkey during its last 30-40 minutes of cooking time.
Layer the beans, fennel, and shallots in an oven proof baking dish. Drizzle with the olive oil, salt and pepper. Toss.

Roast until the beans are wilted and the shallots start to brown. I would not recommend making this in advance and reheating.
