This is a wonderful salad in the heat of summer, and you can use it as an entree or a side dish. It's great with grilled meat and is oh so simple to make.
5 tomatoes, chopped
3 ears of corn (it's summer, for goodness sake, use fresh corn!), cooked and sliced off the cob
1 can black beans
2 tbsp green onion, shallot, or regular onion
1 bunch cilantro, chopped
2 tbsp olive oil
2 tbsp lime juice
1/2 tsp cayenne pepper
1. Whisk together the olive oil, lime juice and cayenne in a large bowl.
2. Add all the veggies and beans, and toss until well combined. Taste test to make sure the seasoning is right. Add salt or more cayenne if the mood strikes you, and enjoy!
